There’s not many things better than homemade butter – especially when served with delicious crusty bread.

This easy recipe will have you coming back for more, and the butter will keep for a week in the fridge.

Note: * This is a ‘home-cook’s’ recipe so you may need to alter quantities slightly. Butter making is not an exact science.  

  • 1 litre Jersey Fresh Pouring Cream

  • 2 tablespoon of olive oil  (use good quality oil)

  • Salt to taste

  • Using a sturdy hand held beater, beat the cream and milk until it separates and you have buttermilk.

  • Drain off the buttermilk (feel free to set it aside for another recipe).

  • Using your hands or a wooden spoon, squeeze out any excess buttermilk. Rinse with cold water, drain and squeeze excess liquid. Repeat this process until the liquid is clear.

  • Add the oil and salt and mix well to your desired taste.

  • Mould into a square and wrap in baking paper or press in to a clean dry container.

  • This butter will keep refrigerated for a week or frozen for about a month.
